Food of the Day – Apple kimchi

Hi everyone! Ask and you shall receive. Here is my recipe for a quick and easy apple kimchi. It makes a great garnish or eaten as a korean appetizer, (ban chan). This refreshing and crisp creation will surely impress a crowd.
This recipe will require one medium size green apple. Larger quantity is easily achieved by taste.
Serves 2 as appetizer (will vary) approximately 15 minutes from start to finish
1 medium green (granny) apple, peeled cored and sliced to matchstick size.
1 teaspoon of fish sauce or korean salted shrimp (as shown). Add more to taste.
2 cloves of garlic, minced
1 end stalk of green onion, diced
1 tablespoon of Korean chili powder . Add more to taste
1 teaspoon of sugar or honey
1 tablespoon of roasted black sesame seed
1 tablespoon of dried pepper flakes (optional). I used it to kick up the heat.
Mix all the ingredients together and place in an airtight glass jar.
Ready to eat immediately or you can place in the refrigerator. Leaving it overnight will allow the spices to intensify. Consume within 48 hours to retain crispness.
